Kale Chips & Carrot Fries

Looking for a new and delicious way to incorporate more vegetables into your diet? These recipes are so good even your kids will be begging for more!
Kale Chips
Preheat the oven to 325 degrees F. Cut 4-5 large kale leavs into 3-4 inch "chips". Place the chips into a ziplock bag and add oil & a pinch of sea salt. If you like vinegar, feel free to add a bit for a "salt & vinegar" chip. Spread out on an aluminum lined baking sheet and bake for 10 minutes.
Carrot Fries
Preheat the oven to 425 degrees F. Slice carrots into fry-sized sticks. Toss them in a bowl with olive oil & a pinch of sea salt. Feel free to add a bit of garlic powder. Spread evenly on a cookie sheet & bake for 20-25 minutes.

Pizza Crust

1 1/3 c Almond, Coconut or Rice Flour
1 teaspoon baking powder
1/2 c milk (think coconut, organic whole milk or cream)
2 tablespoons of olive oil
1. Heat oven to 400 degrees F. In a medium bowl, mix flour, baking powder, milk, and olive oil. Feel free to add powdered garlic for more flavor. Knead dough & let sit for 10 minutes.
2. Place dough on an ungreased cookie sheet & flatten. Bake for 8 minutes.
3. Top with your favorite toppings. My favorite is as follows: organic spaghetti sauce, a nice layer of spinich, tomatoes, onions & artichokes. Sprinkled with mozzarella cheese.
4. Bake an additional 15 to 20 minutes until crust is golden brown & cheese is melted.
